Quick and Easy Homemade Wonton Soup

About the Recipe

I love this recipe because it’s so quick and easy, but it seems like something that would be so complicated to make. I guess if you make your own wonton skins, it would be quite a bit more challenging, but using pre-made wonton skins makes it a piece of cake. What takes the longest is folding up all the wontons, but you can get your kids in the kitchen for some extra hands and bang it out in no time. You can make the wontons up to a day ahead and store them in the fridge covered with a slightly damp cloth. Use homemade chicken bone broth (see my recipe for Chicken Bone Broth) to get a boost of nutrients. The recipe calls for kaffir lime leaves, which you can buy dried on Amazon or in an Asian specialty store, but you can also give a little squeeze of lime or just skip it if you don’t have them.

Ingredients

Wontons

10oz (just over a half a pound) of minced pork (you can also use dark meat chicken)

½ cup hoisin sauce

3 Tbsp chopped cilantro

20 wonton wrappers


Broth

4 cups chicken stock (if using my homemade chicken bone broth, you can use 2-3 cups of stock and the rest water, depending on how rich you want it)

3 slices ginger

5 kaffir lime leaves, lightly crushed.  If using dried, soak in warm water for 5 minutes first.

2 Tbsp soy sauce

Preparation

Make the pork dumplings by combining all ingredients (except wonton wrappers) and combine well.  Add no more than 1 Tbsp to the center of a wonton wrapper.  Don’t add too much because the wonton wrapper won’t seal well and the filling won’t cook all the way through.  Brush a little water around the edges (I use my finger) and pull the 4 corners up to each other (see my reel in Instagram).  Give it a little pinch in the middle, above the stuffing, to seal it.


Once you make the wontons, you can get the broth going.  Place all ingredients in a saucepan and simmer for 3 minutes.  Add the wontons, a few at a time, and cook for 2-3 minutes, or until cooked through. Take out with a mesh spoon and put aside.  I generally cut one in half and check it to make sure it’s cooked (and take a taste!).  If one is cooked, you know around how long they will all take to cook.  Once they are all cooked, put however many you want to eat (maybe 5-6 wontons) in a bowl and ladle some broth over the top.  Top with finely shredded lime leaves (if you have them) and/or any other toppings you may like, such as sliced mushrooms, scallions, etc  and enjoy immediately!
